Let’s cook Butternut Squash Pasta with Crispy Sage and Pine Nuts! This is a variation of a dish I cook for my friends around Halloween which is always a winner. I usually use half pumpkin and half squash, giving it a real autumnal twist, but seeing as it’s still comfort food weather, I thought I’d try it like this. I don’t tend to be too fussy with quantities and just go with the flow when I cook but to serve 4, use about 1 squash, 3/4 sage leaves per person, 3 garlic cloves, 1 stock cube, 1tbs of cream cheese, chilli flakes and pine nuts to taste. Summer is coming but I think I’ll be eating this all year round.
